"Sushitetsu" has its main branch in the port town of Shiogama, which boasts a long history dating back to the era of the Date Clan and is home to its own wholesale market. Their signature dish, "Sushitetsu Monogatari," is a feast for the eyes, featuring fresh seasonal nigiri—primarily sourced from Miyagi’s Sanriku region—beautifully arranged on a large Arita-ware plate. The sushi rice is made with Miyagi Sasanishiki, a rice variety grown only in limited areas. Its clean taste and light stickiness allow the grains to separate perfectly in the mouth, creating an exquisite harmony with the fresh seafood.

This masterpiece was born from a creative spark: What if we took the famous Akiu "Ota Tofu Ten" deep-fried tofu—usually served deep fried and made it the star of our Kitsune Udon? By using this giant, impactful tofu, we’ve captured the essence of Miyagi in a single bowl. Simmered to a gentle sweetness, the oversized "Kitsune" pairs perfectly with our aromatic dashi made from dried sardines (iriko).
